Pistachios

The pistachio tree (Pistachio) or simply pistachio is a type of plant within the sumac family (Anacardiaceae). The pistachio grows up to 12 meters high and is up to 300 years old. The roots can extend to a depth of 15 meters.

The pistachio tree is an old tree. Pistachio trees can bear fruit for centuries, with low-yield and so-called fattening years alternating. The fruit usually develops on the tree during the month of July. Harvest time for these fruits is in September. The historical signs of their age show that pistachios were already eaten as food in Asia a thousand years before Christ. The hot and dry climate is very compatible with the characteristic of this tree.

This tree grows in the area that is very cold in winter and very hot and long in summer. This plant is very well protected against drought and heat in summer. The pistachio tree has a long lifespan, if grown in a suitable condition it will live to be more than 100 years old.
Pistachios can be used in different ways; either raw or roasted.

Salted and Roasted:

Salted and roasted pistachios are a delicious nibble and have a smooth, nutty taste.

If the roasted pistachios are kept sealed, they will stay crisp and fresh for a long time.

Pistachio nuts:

These pistachios are harvested before they are fully ripe, so the green color of the kernel doesn't turn yellow. These pistachios are dried in the sun and peeled. The kernels are immersed in boiling water before the seed skin is mechanically removed.

The peeled kernels are then dried and sorted according to the intensity of the green color.

These are:
Grade S: whole, very dark green kernels
Grade A: whole, dark green kernels
Grade B: whole, normal green kernels
Grade C: whole, light green kernels
Grade D: whole, yellow seeds
Grade E: dark green fraction
Grade H: light green fraction
